Silent substitutions

Somebody swaps a variety for one that looks similar and the chef finds out at service. We ring before we substitute, every time, even at five in the morning, and we would rather deliver eleven items than twelve wrong ones.

The last hundred metres

Most cold chains break at the passerelle, where a crate sits in the sun waiting for a deckhand. We hand over into the galley, to a person, and the log says who.

Invoices nobody can check

Market receipts attached, our fee stated as a line. A provisioner's margin buried in the price of a melon is how a galley budget doubles between seasons with nothing to point at.

The cellar nobody counted

Bottles move between the boat, the bonded store and the villa, and by spring nobody knows what is where. We carry the count through the winter, which costs us nothing and saves real money.
